How to Wilt Spinach in an Alto-Shaam Combi Oven

Wilting at low temps keeps spinach bright green without absorbing water that later needs to be squeezed out

    Step 1

    Start with washed spinach

    Step 2

    Put into perf pans

    Step 3

    Load into your Alto-Shaam combi oven

    Step 4

    Wilt at 150F (65C)convection for 9 minutes. After about 1 minute add 10 seconds of steam.

    Step 5

    Chill in a blast chiller

    Step 6

    Ready to use!
