Remove seeds and diced 5 cups of watermelon in a bowl
Add sugar and cinnamon sticks in the boiling water until the sugar dissolved. then leave to cool for 1 hour in the refrigerator. Leave the cinnamon stick while cooling so it can marinate.
Puree/ liquefy the diced watermelon, cool sugar syrup, bitters, nutmeg, lime juice in the blender for a 1 minute.
this is how it will look after everything combine together
Place in a container and freeze 30 mins until ice crystals form around the edges. Stir the ice crystals in the container then leave it to freeze approx. 1 1/2hrs (until firm)
Now you are ready to serve. Scoop out in dessert cup and decorate with parsley or piece of watermelon
