How to Vegetarian Caviar 'Ajvar' From Serbia & Croatia

Autum.. Traditionally time to prepare ajvar. But why it is called caviar... No idea. It is a sauce made from roasted red bell peppers and roasted aubergine. More details at


  • 4 red bell pepper
  • 1 aubergines
  • 6 pepperoncini
  • 2 Tablespoons vinegar
  • 1 Teaspoon salt
  • 2 Teaspoons black pepper
  • 6 garlic cloves (optional)
  • 2 Teaspoons cucurma (personal addition)
  • ⅛ Teaspoons Smoked paprika(personal addition)
  • 2 Teaspoons Sugar (personal addition)
  • Instructions

    Step 1

    The ingredients: grilled bell peppers, gilled aubergines, garlic, pepperoncini, salt and pepper. Curcuma, and smoked paprika. Vinegar. The oil is to add on top of the sauce when preserved in a jar

    Step 2

    In a food processor, put bell peppers, aubergine and garlic.! reduce to a purée.

    Step 3

    Put in a pot and cook on medium low heat.

    Step 4

    Add the spices, the vinegar and 2 Tsp sugar( personal addition).

    Cook 30 mins or until they become a thick paste.

    Serve with bread or chips. This recipe yields 1 cup. If you want to can the sauce.. Follow the classical method and finish with olive oil before you close the jar
