How to Vegan Tomato Soup

Tomato soup goes good with vegan grilled cheese sandwich!

Supplies

  • 2 Pounds Tomatoes
  • 1 Teaspoon Garlic powder
  • 1 Pinch Salt
  • ¼ Cups Onions (minced)
  • ⅓ Cups Coconut milk (can)
  • 2 Tablespoons Coconut oil (melted)
  • ¼ Teaspoons Paprika
  • 1 Pinch Black pepper
  • 1 Cup Vegetable stock
  • Sprig of parsley
  • Instructions

    Step 1

    Preheat your oven to 400°F. Prep all your ingredients and kitchen appliances and utensils.

    Step 2

    Wash and rinse your tomatoes

    Step 3

    Then slice tomatoes same size pieces.

    Step 4

    Season tomatoes with garlic powder, onions, salt, paprika and black pepper.

    Step 5

    Add coconut oil and mix.

    Step 6

    Put on a parchment paper lined tray.

    Step 7

    Put into oven for 20 mins.

    Step 8

    Slightly browned.

    Step 9

    Then put the roasted tomato mix into high power blender.

    Step 10

    Add 1/3 cup coconut milk, sprig of parsley and 1 cup veggie stock.

    Step 11

    Mix!

    Step 12

    Done!
