How to Sous Vide Kimchi Shrimp in the Alto Shaam CTP Oven

With low temperature cooking in the Alto-Shaam Combi Oven, mastering the art of sous vide requires only your CTP oven and no counter space.

Supplies

  • 12-20 Shrimp (Thawed)
  • Kimchi Powder
  • Instructions

    Step 1

    Add thawed shrimp to a mixing bowl.

    Step 2

    Toss with dehydrated kimchi powder as desired.

    Step 3

    Place shrimp in a sous vide bag and lay flat.

    Step 4

    Seal the sous vide bag.

    Step 5

    Place the shrimp in a perforated pan and place into the Alto-Shaam CTP oven.

    Step 6

    Steam 158F (70C) for 10 minutes.

    Step 7

    Remove sous vide shrimp from the oven.

    Step 8

    Place shrimp directly into the Alto-Shaam Quickchiller (for later use) or remove from the sous vide bag and serve.
