How to Smoke Chicken for Torta

Smoke chicken in an Alto-Shaam cook & hold smoker for tender flavorful chicken to make torts (sandwiches) with.

Supplies

  • 4 ancho chiles, veins and seeds removed
  • 1 teaspoon cumin seeds
  • 12 black peppercorns
  • 1 whole clove
  • 1 tablespoon kosher salt
  • 4 garlic cloves
  • 3 tablespoons vegetable oil
  • 4.5 pound chicken, cut into pieces
  • Instructions

    Step 1

    Smoking time 45 min.

    Step 2

    Cook temperature 325F (163C).

    Step 3

    Hold temperature 170F (77C).

    Step 4

    Chicken braised with ancho chiles in cook and hold smoker

    Step 5

    Fill smoke box with water soaked wood chips, add fresh cilantro.

    Step 6

    Add smoke box to smoker.

    Step 7

    Add marinated chickens to smoker.

    Step 8

    Seasoned chicken pieces.

    Step 9

    Add braised ancho chicken pieces to focaccia bread.

    Step 10

    Top with cotija cheese.

    Step 11

    Add cilantro and chopped green onions.

    Step 12

    Add jicama.

    Step 13

    Season with salt and pepper.

    Step 14

    Portion size sandwich.
