Slice block cheese of choice into 1 inch thick pieces
On a baking sheet, put down foil and a rack. Place cheese on top of rack
Put hotel pan full of ice into the bottom of the Combi Oven
Fill smoker box with pre-soaked wood chips either purchased through Alto-Shaam or of similar size from local grocery or home improvement store.
Place filled smoker box on the prongs in the back of the Combi Oven.
Put cheese in the Combi Oven
Add ice directly to the bottom of the Combi Oven
Close door and temp will be between 55-60 degrees. Cold Smoke for 1 hour and 15 minutes.
Smoke will fill the cavity durning the smoking process
After 1 hour and 15 minutes pull cheese from Smoker.
Slice and Serve! Enjoy!
