Place egg whites in mixing bowl and whip to stiff peaks.
Fold in salt
Layer 1/3 of whites into bottom of a 4" deep 1/3 hotel pan
Place scrubbed beets onto egg whites.
Add garlic cloves and thyme sprigs.
Completely cover with the remaining egg whites.
Roast in your CT Express at 350F (177C) in combi mode for 90 minutes.
When finished removed beets from egg whites and take the skin off. Slice or dice the beets for service.
