Prepare the rub.
Poke little holes on the skin of the pork.
Apply the spice rub on the meat only, not on its skin. Leave overnight.
Roast pork for 50 minutes at 200 degrees Celcius.
Once cooked, apply white vinegar on the skin. Return to oven under grill at maximum heat.
The skin will start to blister and char. Grill for 10-15 mins.
Rest for 10 minutes.
Use a serrated knife to scrape off charred bits.
