Be sure to have a sharp knife. It'll make life a lot easier but be careful when slicing with sticky hands - these fruits are seriously juicy.
I prefer my apples to be finely chopped. Simply slice the apple into quarters, then slice the quarters in half and finely chop.
Chop the banana in the same manner and add to a large bowl.
Remove the stone from the apricots and slice into thin strips. You are going for different shaped cuts from each fruit. It makes the whole thing look more delicious.
Kiwi Fruit! The seeds add some serious crunch to the salad. Use a spoon to scoop out the flesh and then slice the halves into half moon shapes.
Looking good. But more colour required however and perhaps some more bite. Onwards and upwards.
If you can get your hands on Alfonso Mangos they are the perfect size for this salad. One of these little gems will suffice. Remove the stone and then scoop out the flesh with a spoon. Thinly slice.
Finally sprinkle with a handful (1tblspn) of unsalted almonds and/or pistachio nuts to complete this delicious, healthy and quick breakfast fruit salad.
Depending on the season feel free to add other fruits, nuts and berries. I'm a huge blueberry fan. Go for colour and fruits that are in season. There is nothing worse than sour or tasteless fruits.
