How to Milk Braise Pork Shoulder in the Cook & Hold Oven

Free up a burner. Slowly braise a pork shoulder in your cook & hold oven.


Step 1

Sear pork shoulder in a deep pan

Step 2

Remove from pan

Step 3

Cook down onions and garlic

Step 4

Deglaze with wine

Step 5

When wine is reduced add stock, thyme and milk

Step 6

Bring to a boil

Step 7

Preheat oven to 300F (149C).

Step 8

Set probe to braise at 185F (85C) and hold at 160F (71C).

Step 9

The milk will break. Reduce to sauce consistency

Step 10

Blend to bring the sauce back together

Step 11

Add lemon juice

Step 12

Meat is tender enough to pull by hand
