How to Make Zucchini Fritters With Chili Lime Sauce

Supplies

  • 2 Large zucchini, shredded
  • 1 Small onion, chopped
  • 2 Eggs
  • 1 Cup Flour
  • ½ Teaspoons Chili powder
  • ½ Teaspoons Baking powder
  • ¼ Teaspoons Pepper
  • 1 Cup Mayonnaise
  • ½ Teaspoons Chili powder
  • ½ Lime, squeezed for juice
  • Vegetable oil
  • ½ Teaspoons Salt
  • Instructions

    Step 1

    Chop onions.

    Step 2

    Add onions to a large bowl.

    Step 3

    Shred zucchini.

    Step 4

    Add zucchini to onion bowl.

    Step 5

    Crack 2 eggs in a separate bowl.

    Step 6

    Whisk eggs and add to zucchini.

    Step 7

    Stir well. It will become frothy, which is good!

    Step 8

    Add about 1/2" oil to large pan or wok. Heat on medium heat.

    Step 9

    In a separate bowl, add flour.

    Step 10

    Add baking powder.

    Step 11

    Add 1/2 tsp chili powder.

    Step 12

    Add salt.

    Add pepper.

    Stir well to blend.

    Add dry ingredients to zucchini bowl.

    Stir gently.

    It should look like this. Set aside.

    Step 18

    Time to make the sauce! In a separate bowl, add the mayo.

    Step 19

    Add 1/2 tsp chili powder.

    Step 20

    Squeeze half a lime for the juice.

    Step 21

    Stir well.

    Step 22

    When blended, place in refrigerator to mesh flavors.

    Step 23

    Drop heaping spoonfuls of zucchini mixture into hot oil. If using an oil strainer, add it to pan now.

    When edges start to brown, flip fritters.

    Step 25

    Remove from oil and place on strainer.

    Step 26

    If you don't have an oil strainer, cover a plate with a paper towel to absorb the oil. Place fritters here when they are done.

    Step 27

    Arrange zucchini fritters on a plate with chili lime sauce in the middle. Garnish with a slice of lime if so desired. Serve and enjoy!
