How to Make Zucchini and Farmers Cheese Fritters

A healthy treat using zucchini and farmers cheese.

Supplies

  • 1 Zucchini
  • ⅓ Cups Farmers Cheese
  • ½ Egg scrambled
  • ½ Tablespoons Olive oil
  • Instructions

    Step 1

    Farmers cheese is like ricotta cheese and tastes like a mix of cream cheese and cottage cheese. If you don't have farmers cheese you can use feta or ricotta.

    Step 2

    Gather ingredients

    Grate the zucchini and squeeze out as much water as you can

    Step 4

    Step 5

    Place strained zucchini in a medium bowl

    Step 6

    Measure out cheese and mix egg

    Step 7

    Add cheese

    Step 8

    Mix together

    Step 9

    Add half of the mixed egg and stir

    Step 10

    Add 1/2 tablespoon olive oil to a pan

    Step 11

    Scoop the mix into tablespoon size rounds and place in pan. Press down to flatten out

    Step 12

    After a few minutes flip over

    Step 13

    When the other side is done place on a paper towel to remove excess olive oil. Serve hot or cold and top with salt and pepper
