Preheat your oven to 180Β°C/350Β°F.

Before you start, make sure the butter you use is unsalted. PB has a high content of salt so using salted butter would give you an overly salty cookie.

First you need to make the peanut butter mixture. Now scrape allllllllll of the peanut butter ππππheheh

The recipe calls for 1/2 cup....... But....... I went juuuuust slightly a little over....

Now place the remaining ingredients into a small bowl; the PB, butter, and honey.

Now mix it up well. If it gets a little tough to mix, pop it in the microwave for 15 seconds. Make sure you don't melt the butter, just making it slightly soft. By then the PB would be looser too.

Now in a large bowl, place butter, shortening and both kinds of sugars.

Should look something like this. Then add in the egg. (I forgot to snap a picture with the egg!)

And then vanilla.

And your dry ingredients; flour, baking powder, baking soda and salt.

OPTIONAL: Fold in the white chocolate chips. You can totally omit this, if you don't like it. :)

I use an ice cream scooper to measure out the dough. Then I place it on my reusable baking cloth which I sprayed with non stick cooking spray. You could just use parchment paper. :)

Make sure you leave some space in between each cookie as they spread out :) bake for 11-15 minutes.

When they come out of the oven, they will be REALLY soft. Almost like bread. Leave them aside, and they will set as the cool. Btw the cookie on the most right bottom, my 2 year old niece did that -.-

After about 20 minutes, they would've set and you can indulge in this chewy & thick peanut butter cookie. With white chocolate chips. How can you resist?

P/S: You could substitute the white choco chips with any other thing you like. Toffee bits, milk/dark choco chips, mini Reese's pieces, M&M's, choco chunks, anything! The possibilities are endless. :)
