How to Make Warm Pumpkin and Avocado Salad

simple yet tasty warm pumpkin salad

Supplies

  • 150 Grams pumpkin
  • 1 ripe avocado
  • cherry tomatoes
  • fetta cheese
  • minced or dried parsley
  • sea salt
  • pepperoncino
  • 1 Tablespoon extra virgin olive oil
  • walnuts
  • Instructions

    Step 1

    Prepare your pumpkin, approx 150-200gr.

    Step 2

    Peel and cut into cubes

    Step 3

    Drizzled with 1 tbsp of extra virgin olive oil.

    Step 4

    Sprinkle with sea salt

    Step 5

    I like it more spicy to I sprinkle pinch of pepperoncino

    Step 6

    Toss toss and goin to the microwave. Set it on high, heat for 7 minutes. Stop every 2-3 minutes to toss

    Step 7

    Prepare your ripe avocado

    Step 8

    Cut in halved and scoop the flesh

    Step 9

    Prepare your cherry tomatoes, as many as you like :) you may cut in halved or not

    Step 10

    I choose to cut in halved :)

    Step 11

    If you like, you can crumble with fetta cheese. Or maybe, grated parmesan :)

    Step 12

    Sprinkle with some walnuts and some minced or dried parsley ... and is ready to eat :) hope you like it and enjoy
