How to Make Vegetarian Tacos

A simple, easy and delicious guide to make vegetarian tacos, Mexican style.

Supplies

  • 1 Onion
  • 10 White mushrooms
  • 3 Zuchini
  • 15 Squash blossom
  • 15 Corn or flowert tortillas
  • 3 Cups Vegetable oil
  • Salt
  • Pepper.
  • Instructions

    Step 1

    Here is what you will need or your " mise en place", remember to wash and desinfect all ingredients

    Step 2

    Chop the onion, mushroom and zuchini in "brunoise" or small cubes.

    Step 3

    Add some vegetable oil to a casserole.

    Step 4

    Add the onion and stirfry for about 3 minutes.

    Step 5

    Add the zuchini in cubes to the casserole and stir, mix for about two minutes.

    Step 6

    Add the mushrooms.

    Step 7

    Because of the high content of water of the mushrooms you will need to simmer the liquid in half, it takes about ten minutes.

    Step 8

    Add the squash blossoms.

    Step 9

    Stir for about ten minutes, remember to evaporate the liquid or drain it after the ten minutes. Dont forget to add some salt and pepper.

    Step 10

    Take a corn or flour tortilla ( in this case i used corn) and put a a spoon of the vegetable mix into the tortilla Roll it up.

    Step 11

    Add three cups of vegetable oil into a large pan, let it heat. Carefully put one rolled up taco at a time until the pan is full.( this will help in keeping the rolled up shape of the taco.)

    Step 12

    Once the tacos have a nice golden-brown color, take them off the pan. Put some paper towels onto a plate. Put the tacos onto the plate and let them rest for about one or two minutes.

    Step 13

    VoilĂ , bon appetit!. I had on the side some avocado salsa and some crema fresca. Originally these tacos in Mexico are called tacos dorados and can be made up of anything. Hope you enjoyed!
