How to Make Vegan Coconut Rum Balls

Supplies

  • 500g dates
  • 400g cashews (unsalted)
  • Zest of 1 or 2 limes
  • 4 T Coconut cream
  • 2 T white rum
  • Powerful blender or food processor
  • 4 T cocoa powder
  • 100 g desiccated coconut
  • Instructions

    Step 1

    500g Pitted dates

    Step 2

    Pre chop dates.

    Step 3

    Food processor or finely chopping dates would work best. Blenders don't respond we'll to dates.

    Step 4

    Consistency to make your dates.

    Step 5

    Turn 400-500g cashews into crumbs.

    Step 6

    Zest that lime!

    Step 7

    The more lime rinds the better!

    Step 8

    Add 3T white rum.

    Step 9

    Add 4T coconut cream.

    Step 10

    Add 2,3 or 4T cocoa powder.

    Step 11

    Mix with hands or a utensil.

    Step 12

    Roll into a smooth, bite size ball. Roll in a small bowl of desiccated coconut.

    Step 13

    Yum! Store in the fridge in a sealed container. They last a long time.
