by Erum Khan

  • 4 Potatoes
  • 1 Tuna fish can
  • 1 ⅛ Onion, finely chopped
  • ½ Cups Breadcrumbs
  • 2 Green chiles
  • 1 Lemon
  • ½ Teaspoons Black pepper
  • ¼ Teaspoons Red chili powder
  • ½ Teaspoons Coriander powder
  • ½ Teaspoons Cumin powder
  • 1 Teaspoon Salt
  • 1 Egg
  • ¼ Bunches Cilantro
  • 1 Cup Olive oil
  • Instructions

    Step 1

    Gather the ingredients.

    Step 2

Peel the potatoes- cut into even cubes- boil them in a pot of salted water til fork tender- then strain.

    Step 3

Smash the potatoes in a large bowl

    Step 4

Toss in diced onions, chopped green chilies, chopped cilantro, and breadcrumbs.

    Step 5

Throw in all the powdered spices.

    Step 6

Drain all the liquid from the can of tuna and then toss the tuna into the mixture. Add a juice of half a lemon. When I cook with any seafood, I like to use lemon juice.

    Step 7

Time to get your hands dirty. Mash it all up real nice.

    Step 8

Until you get a mashed up big ball like so.

    Step 9

    Then roll into smaller balls

    Step 10

    Shape into patties.

    Step 11

Make an egg wash by whisking an egg with a tablespoon of water.

    Step 12

Heat oil in a shallow pan on med high.- test the heat by dropping in a bit of egg wash. If it sizzles, you are ready to go!

    Step 13

Coat the entire tuna kabob in egg wash.

    Step 14

Then put it in the pan.

    Step 15

Repeat. Then flip after three minutes or so.

    Step 16

Until its golden brown and looks utterly irresistible...

    Step 17

Quick sauce: equal parts sriracha and honey, and squirt of lemon. Traditionally, I'd make a sauce with apple butter with dashes of all powdered spices, & lemon juice but couldn't find apple butter. :(

    Step 18

Put it all together and boom! A super scrumptious sandwich for your taste buds. ;-)
