Here is the way my mama taught me how to peel  a green plantain.Chop off the ends. Make 2-3 slits from  top to bottom. Remove the peel with your knife or your fingers like i did . Easy peasy.

In a frying pan,pour some canola oil.  Raise the flame to medium high heat. Place a few pieces in the pan making sure not to crowd them. We want to cook them partially.

Place the plantain in the plantain smasher also called a tostonera and smash away. Peel the tostone piece gently off the tostonera with a butter knife if stuck.

Don't own a tostonera ? No problems , you can use a small plate or board, put some foil on a table and smash away.

Working quickly dunk a pce in the water  & add to the frying pan immediately. Make sure the heat is on med-high heat. DO NOT RE-FRY THE TOSTONES ON MEDIUM LOW HEAT. It will absorb too much oil. Yucky

Want to save some for later, no problem, do what I do. Fry them the first time and smash. When cooled I like to place them on this glad press and seal wrap and put in a gallon size freezer bag.

Some Tips : 1-To preserve a green plantain put it in the fridge. They get yellow quick. 2-Never peel a cold green plantain, bring it to room temp then peel. They are hard to peel when cold.:)
