1.) Grab a sheet pan and place a roasting rack on top. 2.) Mix the salt, black pepper, paprika, brown sugar, & dried oregano in a small bowl. 3.) Season the pork shoulder very well.
4.) Cut the red onions and garlic bulbs in half leaving the skin on. 5.) Place the onions, garlic, Japanese aubergine, and fresh thyme on bottom of rack. 6.) Place seasoned pork on top as follows.

Preheat oven at 225 degrees & set timer for 4 hours.
Place pork shoulder in and walk away!
After 4 hours in the oven...
Let it rest for 10 minutes before cutting it.
Cut after cooling!
Place all roasted vegetables on the bottom of a plate.
Place the slices of pork on top, then lastly zest & juice a fresh lemon. In about 4 hours, you will have something to die for! Enjoy and Eat!
