Okay, so who doesn't love country fried steak? Now the issue I've always had was it wasn't as crispy as I'd like it. BUT NOW I've perfected this recipe and I wanted to share it will all of you :)

I season my meat with my favourite meat seasoning for me its a Greek seasoning called cavenders I use this seasoning on just about everything it's absolutely amazing! But this step isn't necessary.

Get a nice size frying pan and pour in the 1/2 cup of oil. Place on medium to low heat. I keep mine at 3-4 You don't want the oil too hot or it will burn your crust and then the inside won't be cooked

Grab an extra plate to place the finished product on. You'll want it handy now because by the time you need it your hands will be all gross.

Yes, I know normally you are suppose to only do flour, egg wash then back into the flour but I find that when you place it back into the egg wash in flour for the second time it makes a better coat

Now that the steaks are ready, take a pinch of flour over to the oil and sprinkle it in. If it sizzles then you're ready to start cooking.

Allow oil to cool a bit then place it into a heat resident cup. Then CAREFULLY place 1/4 cup of the oil back into the pan on medium to low heat allowing it to get hot.

When the grease is hot, sprinkle the flour evenly over the grease.

Using a whisk, mix the flour with the grease, creating a golden paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty.

Keep cooking until the it reaches a deep golden brown colour. This should take about 2-3 minutes.

Pour in the milk, whisking constantly. Add the salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes.

Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is properly seasoned.
