Preheat the oven at 350F or 176C.
Butter and flour 2 baking pans - I used a medium one and a small one. You can also use one large one.
Whisk together the first 3 ingredients in a medium sized bowl.
In a separate bowl, using a standard or handheld mixer, mash 3 bananas (about 1 ½ cups).
Mix in ¼ cup softened butter.
Mix in the sugars.
Blend in the eggs (preferably at room temp).
Mix in yogurt. Mine is homemade yogurt but any WHOLE YOGURT (not low fat) is ok. If you want the bread to come out with a strong vanilla taste, vanilla yogurt is alright, but it'll be a tad sweeter.
Add vanilla extract.
Add ½ tsp cinnamon.
Blend in the flour mixture in three (close to equal) additions. ⅓
3/3. After this addition is well-blended, you may fold in chocolate chips with a spatula or fork, if desired.
Fill the batter into the pans.
Sprinkle on these rainbow beauties! (Excuse my sweatpants)
Bake the loaves in the preheated oven for 1 hour. If you make a smaller loaf, that one should only take around 45-50 minutes.
Cool for 10 minutes in the pans then cool completely on a wire rack.
