Ingredients: sweet potato, onion, fajita Spice, chicken, garlic sea salt, fry light, low fat cottage cheese w/ onion&chives, salsa to serve
Tools: bowl, spatula, non-stick pan, mandoline, tablespoon
Peel sweet potato with mandoline and mix a pinch of garlic sea salt and 1 tablespoon fry light together with the potato in a bowl.
Form into a round shape in the pan and press together with a spatula. Heat for 10-12 mins on low-medium heat until golden.
When golden put a plate against the pan and flip potato rosti onto the plate. Put the rosti back on the pan with the spatula and heat on the other side for 10-12 mins or until golden like this.
While heating the other side of the rosti: Heat chicken and fajita spice in a separate pan until chicken is golden.(follow description on pack)
Serve on a plate with chicken, cottage cheese (on top) and your favorite sauce (I used salsa). Enjoy 😋
