How to Make Super Simple Yet Delicious Pasta Salad

this pasta salad is perfect for entertaining or for any day of the week. not only is it delicious, but it is also a lot healthier than those mayonnaise-based pasta salads out there. enjoy!


  • 1 14oz box rotini
  • 1 15oz can black beans
  • 1 15oz can red kidney beans
  • 2 bell peppers (any color)
  • 2 Cups Catalina Dressing
  • 1 10oz can Original Rotel
  • 6-8 scallions
  • Instructions

    Step 1

    I like to use tri-colored rotini when I want to impress (it adds excellent color to the dish) but otherwise I use multigrain because it is healthier. You can also substitute Lite Catalina for regular

    Step 2

    Bring 4-6 quarts of water to a rolling boil; add salt to taste, if desired. Add pasta and cook to "al dente" as directed on box

    Step 3

    while pasta is boiling, rinse and dice bell peppers and scallions.

    Step 4

    When pasta is done, drain and add to large glass bowl. Drain Rotel; drain and RINSE both kidney and black beans

    Step 5

    add all ingredients to bowl with pasta, toss with Catalina dressing

    Step 6

    be sure to mix ingredients well, evenly distributing the Catalina goodness

    Step 7

    Bon a petite! best served well chilled. even my dog is jealous ;)
