Cut zucchini whichever way you like; lengthwise or round
Mix basil, paprika, salt and pepper to the panko and set aside for breading
In another bowl mix 1 tbsp of water to the egg and beat lightly
I'm using whole wheat but you can always use regular all purpose flour
So just lightly dust zucchini in flour, then egg and then the panko and bake at 350 for just about 10 mins on each side
You can try panko with eggplant, mushroom, asparagus, just about any vegetable you like or the one you don't like and wanna give it a try.
