All the ingredients
Pre heat your oven to 375
Okay let's get cooking, take the Cornish hens and clean them with water and vinegar
Rinse and remove all the water
Now let's clean the hen. Remove the little tail that I am showing here
The Cornish hen has this skin on it that should be removed and discarded . See me do it
Pierce the hen a few places. This allows the seasoning to really get into the meat.
Do this everywhere there is a thick part of meat
Now let's make our marinade. Take the mojo and add it to a bowl. To the mojo add the garlic and onion powders and the adobo powder too.
Add the sofrito
And the rest of the seasonings. Stir this well
Add this all to the hens and rub it in and out well
Take your Cornish hens and put them on a lge baking dish
Add the giblets as well. Totally optional but oh so delish☺️
Pour any leftover marinade over the hens
Cover the hens with aluminum foil
And put them in your preheated oven for 30 minutes.
30 minutes has passed and we will uncover our hens and return it back to the oven to continue cooking. IF there is some juice that has accumulated at the bottom remove and set aside.
If any juice has accumulated Do not discard we can use it for basting. If you have no juices don't worry, skip this step
Put the hens back in the oven for another 30 minutes until browned or until the internal temp in the thickest part of the thigh measures 165 deg
Baste the hens every 15min with the juice if any. if you have no juice to baste the hen with, use 1 tbs of melted butter to brush the skin and make it crispy and golden.
It has been a little bit over an hour and my hens are Nicely browned and ready to enjoy
Let it rest for 5 minutes.
My hens were kinda big, so I split them in half. Totally optional
I poured the juices over my hens. Absolutely delicious. Enjoy. 😊 I made 4 hens. My family is big. This recipe has been scaled for two hens. If you want to make 4 just double the recipe.☺️
