In a small bowl, dissolve yeast and 1/2 teaspoon sugar in 1/2 cup of warm water. Let stand until creamy, about 10 minutes.
In a large bowl, mix together flour, 1/4 cup sugar, and salt.
Make a well in the center of mixture in large bowl.
Add the yeast mixture and the oil into the well.
Mix and form into dough. If mixture is dry, add a little water. Knead dough until smooth, about 7-8 minutes.
Lightly oil a large bowl and then place dough in the bowl. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1-2 hours.
This is what it should look like after risen.
Preheat oven to 450 degrees F.
Dissolve baking soda in 3 cups hot water.
Turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape.
After dough is all shaped, dip each piece into the baking soda solution.
Place each pretzel onto a greased baking sheet. Sprinkle on kosher salt if desired. Bake for 6-8 minutes.
Pretzels should be golden brown.
Best if served when warm. I recommend spreading butter on top of the pretzel.
