How to Make Smokin' Chipotle Black Bean & Chicken Salad

  • 4 Teaspoons Smokin' Chipotle Seasoning Blend
  • 2 Chicken breasts, butterflied, grilled & diced
  • 1 Can black beans
  • 2 Tomatoes, seeded & diced
  • 1 Cup Corn, grilled or roasted
  • ½ Cups Cilantro, chopped
  • 1 Yellow bell pepper, diced
  • 1 Jalapeno pepper, seeded & diced
  • 1 Lime, juiced
  • 3 Tablespoons Olive oil
  • Instructions

    Step 1

    Step 2

    Butterfly the chicken breasts (cut in half, lengthwise) then brush with olive oil and use 1 tsp. of Smokin' Chipotle seasoning on each side of the chicken. Set aside and let marinate for 10 minutes.

    Step 3

    Open the can of black beans and add 1 tsp of the chipotle seasoning. Cook over low heat for 10 minutes or so. Strain the beans and place in a bowl large mixing bowl.

    Step 4

    Grill, or pan sear, the chicken until it is just done. Don't over cook it, it will cook in 5-6 minutes since the chicken was butterflied. 2-3 minutes per side. Let chicken rest for 10 minutes.

    Step 5

    After it has rested, cut the chicken into 1/4" cubes. Make sure to let it rest so it sucks back up all the juices it released while cooking - this is important so make sure to rest for 10 minutes.

    Step 6

    While the chicken is cooking, chop the cilantro and bell pepper then add them to the mixing bowl.

    Step 7

    Do the same with the jalapeño. You can leave the seeds in if you prefer really spicy food. The heat in peppers is in the seeds. Dice the peppers in 1/8" dice so they are nice and small.

    Step 8

    Roasting the corn is optional. If you have the time and a grill, it's even better if you grill it first, then remove the corn from the husk. Whatever you do, add 1 cup to the mixing bowl.

    Step 9

    Add everything together, toss with the left over olive oil and last tsp of Smokin' Chipotle. Mix well, then give it a taste for seaoning. Chill for an hour or more.
