Remove the brown casing from the spruce tip.
Finely chop the spruce tips.
Combine water, honey, and spruce tips in a pot on low heat. Allow mixture to come to a rolling boil, then reduce heat, allow to simmer for 5 min.
Let mixture sit until completely cool.
Strain liquid through a cheesecloth into a sterilized container.
Refrigerate, and enjoy! Goes great on food or in drinks.
