Put sugar and strawberries together in a bowl.
Blend till smooth with a stick blender. Or use a liquidiser jug...
Should look like this.
Lightly whip cream.
Should look like this when done.
Put egg whites in a clean bowl and whisk with an electric whisk. Add a pinch of sugar.
Start to whisk and add a squeeze of lemon, this will stop the egg whites from splitting and going watery...
While egg whites are whisking Add 1/3 strawberries to the cream.
Fold together then add the rest of the strawberry mix!
Egg whites should look like this after a few minutes.
If strawberries and cream look a bit lumpy?
Give them a whisk!
Fold in 1/4 the egg whites to the strawberries and cream mix!
Gently so you keep as much air as possible so the mousses are light and fluffy!
Now fold everything together! Again gently!!
Taste and add some icing sugar if it needs sweetening!
Spoon into glasses, or one big glass dish if you prefer!
Put in the fridge for 4-6 hours or over night! Will last for a couple of days! :-) check out the guide on how to make it look "posh" easily!
