How to Make Shiroi Koibito (White Chocolate)

  • 100 Grams Butter
  • 100 Grams Cake flour
  • 1 Egg
  • 60 Grams Granulated sugar
  • 240 Grams White chocolate
  • Instructions

    Step 1

    Melt the butter in a microwave. Only melt it enough to cream, not until all is transparent.

    Step 2

    Add sugar, mix well.

    Step 3

    Add egg, mix well.

    Step 4

    Add flour, mix well.

    Step 5

    Fully combined.

    Step 6

    I use a silicon macaron template to bake but the original version is to use parchment paper or cooking sheet and pipe into squares.

    Step 7

    Preheat oven to 356F. Fill your piper with the batter, or use a pastry bag and snip off the end.

    Step 8

    I piped this into hearts, ovals, and bears. Put in oven and bake for 8-10 mins.

    Step 9

    Baked! They should be alittle browner than this in the middle though. Leave to cool.

    Step 10

    Line aluminum foil on a tray.

    Step 11

    Melt the white chocolate over a double boiler.

    Step 12

    Pour on to the foil and spread evenly.

    Like so. Now put this in the freezer for just a minute for it to harden up a bit.

    Step 14

    Take it out and cut into squares.

    Step 15

    Place between two cookies and chill until the chocolate is hard.
