10 heads fresh garlic

Crush the heads with the base of your palm and the head will break apart into cloves.

Fill a jar with unpeeled cloves. Remove the outer most skin leaving a layer still intact on the cloves.

Add 1 tbsp salt 1 tsp honey to each jar

Fill jar with vinegar of your choice. Some use balsamic, malt, cider, or plain old white. I used 1 tbsp of balsamic and the rest white vinegar. Cover cloves up to the top in vinegar.

Use plastic wrap to prevent rust from getting in.

Date it and write recipe on lid. Store in a cool location. The longer the better, some say the Seer turns to medicine after 7 years.

The longer it sits the softer and smoother it gets. After a year you can start trying it. Check jars periodically you might have to add more vinegar or bleed the jars of excess gas.
