How to Make Sausage, Green Peppers & Onions Frittata

Family Friday night meal!

Supplies

  • 5 Potatoes, diced
  • 2 onions, diced
  • 2 green peppers, diced
  • 1 Pounds Jimmy Dean Ground Sausage
  • 2 ½ Teaspoons Emeril Essence
  • salt and pepper, to taste
  • 12 eggs, beaten
  • ¼ Cups 1% milk
  • 2 Teaspoons olive oil
  • Instructions

    Step 1

    Preheat oven to 375*. In an oven-proof skillet over medium heat add olive oil and cook potatoes for about 7 min stirring constantly.

    Step 2

    Add green peppers, onions, Emeril Essence, salt & pepper & mix well. Cook this mixture for 5 min remove from skillet and set aside.

    Step 3

    Cook the ground sausage in the pan breaking it up into pieces. Once the sausage is done drain it and then return it to the skillet and add the potato mixture.

    Step 4

    In a large mixing bowl add the eggs and 1/4 cup milk and beat well. Next add it to the skillet and stir it gently to make sure that it is mixed throughout but don’t go too crazy.

    Step 5

    Cook on top of the stove for about 5-10 minutes and then cover with foil and place in the oven and cook for 20 minutes and then uncover and cook for another 5 minutes.

    Step 6

    It is done when you can put a fork through the mix and it comes out clean.
