I grew up always visiting Disney World. They have a soup at a hotel we stayed each year called Cinderella soup. This is my version. Start w two pounds strawberries
Cut tops off and lay flat side down on a parchment paper lined sheet pan
I always use extra strawberries bc I have very small, very adorable bandits that run round my house
about 1/2 c brown sugar. Split one vanilla bean and scrape the beans into the brown sugar. Mix well. If you don't have a vanilla bean, use about a tsp of vanilla. Stir up
Sprinkle vanilla'd brown sugar all over strawberries and roast at 400°
After about 15 minutes the sugar is golden liquid and tops are browned. They're ready!
Let cool slightly, then pour all juice and strawberries into a food processor.
Pulse until smooth
Next add: 1c yogurt, and 3-4TB whipping cream and half a squeezed lemon. I taste and add more if I need a more thin or creamy texture.
Lastly, two big spoonfuls of vanilla bean ice cream and 1/2 tsp cinnamon. Pulse until mixed well
And that's the color I like. Pale pink and pretty. Cover and chill for at least three hours (tho it's ready to eat immediately)
Now for the bestest ever way to use bread. Cinnamon sugar croutons. I use a white loaf bread and cube it up in a large bowl
Melt 6 TB butter and toss over bread
Next, mix 1/2 c sugar w 2 tsp cinnamon.
Pour that over bread and toss
Bake at 375° until browned. About 20 min but keep an eye on it
Toasted and delicious. We use these for when we eat oatmeal, soups, snacks and even in salads
Pour soup in a jar or bowl. Top w a few warm croutons
