How to Make Roasted Carrot Chutney Using Your Alto-Shaam

To free up a burner slow cook carrots in your Alto-Shaam Cook & Hold oven. This makes them tender and sweet.

Supplies

  • Carrots
  • Cumin
  • Cardamom
  • Red chilly
  • Yellow dal
  • Coriander
  • Garlic
  • Water
  • Kosher salt
  • Ground White pepper
  • Shredded coconut
  • Tamarind paste
  • Instructions

    Step 1

    Peel carrots

    Step 2

    Sauté for a few minutes

    Step 3

    Roast in a Shaam cook & hold oven at 325F (163C) for 60-90 minutes until very tender. Time is determined by amount of carrots cooked.

    Step 4

    Fully roasted

    Step 5

    The spices you will need

    Grind dal and spices

    Step 7

    Grind very fine

    Step 8

    Add garlic

    Step 9

    Add carrots

    Step 10

    Purée smooth. You may need some water to adjust consistency
