How to Make Red Velvet Whoopie Pies

Yes - mini red velvet whoopie pies. These taste decadent but are simple to make. My husband loves these because of the cake sandwiched with cream cheese frosting. Mmmmmm.


  • 1 ½ Cups Flour
  • 1 Teaspoon Baking soda
  • ¼ Cups Cocoa powder
  • ⅛ Teaspoons Salt
  • 6 Tablespoons Butter
  • ⅓ Cups Vegetable shortening
  • ¾ Cups Light brown sugar
  • 1 Egg
  • 1 Teaspoon Vanilla extract
  • ⅔ Cups Sour cream
  • 2 Tablespoons Red food coloring
  • Frosting
  • 1 Cup Cream cheese
  • 4 Tablespoons Unsalted butter softened
  • 1 Teaspoon Vanilla extract
  • ¾ Cups Confectioners sugar
  • Instructions

    Step 1

    Preheat oven to 350 degrees - sift together flour, baking soda, unsweetened cocoa powder and salt - set aside

    Step 2

    Place butter, vegetable shortening, and sugar in large bowl and beat until pale and fluffy

    Beat in egg, vanilla extract and food coloring

    Step 5

    Add half of the flour mixture scrape down sides of bowl

    Step 6

    Put in the sour cream

    Step 7

    Mix until smooth

    Step 8

    Put the remaining of the flour mixture in and mix until fully incorporated

    Step 9

    Scrape down sides of bowl and mix again

    Step 10

    Spray Whoopie pie pan with flour spray - Put spoonful of batter in Whoopie pie pan - a cookie sheet with parchment paper will also work if you don't have Whoopie pie pan

    Step 11

    Bake at 350 degrees for 12-14 minutes - Nice and fluffy once baked

    Before adding frosting

    Combine cream cheese and butter mix until well blended - mix in vanilla extract and confectioners sugar 1/4 cup at a time - mix after each addition

    Step 14

    Put frosting into frosting bag to make spreading easier

    Step 15

    Squeeze frosting onto flat side of the middle of one half of cookie and top with a second cookie
