Roughly chop your bacon.
Slice your onions.
Assemble your other ingredients.
Put all of the bacon into a large sauté pan.
Place the bacon in your combi oven at 350F (177C) for 20 minutes.
The combi oven will allow the bacon to crisp without burning.
Add onions to the sauté pan.
Mix them into the bacon and bacon fat.
Put back into the combi oven for 5 more minutes.
The onions should be soft and fragrant.
Start adding in the rest of your ingredients. Maple syrup.
Mix it all up!
Make sure your mixture is pretty "flat".
Back in the combi for 35 minutes.
The liquid should be thick and syrupy.
Put everything on a pan to chill it.
Put into either a chiller or a refrigerator to get it cold.
We put it into jars for later use! Great on a burger or steak or just with eggs and toast!
