Gather your ingredients. Preheat the oven to 350.
Divide dough in balls, about 1 1/2 inches each.
Roll each ball in the sprinkles, working the sprinkles into the dough and then shape into a ball again.
Re-roll in sprinkles and place on a parchment paper lined cookie sheet. Press down slight to form a disk and then bake as directed.
Let the cookies cool completely before adding your ice cream filling.
Enjoy quickly or they'll melt!
