How to Make Quinoa Tabbouleh Salad à La Christina

  • 150 Grams Quinoa
  • Juice of 1 lime
  • 1 Garlic clove
  • ⅓ Cucumber
  • 2 Tomatoes
  • 2 Scallions
  • A handful parsley
  • Salt
  • Pepper
  • 5 Tablespoons Olive oil (maybe a bit more)
  • Instructions

    Step 1

    Almost all the ingredients..

    Step 2

    Cook the quinoa for about 20 minutes. Directions should be on the packing. I used double the amount of water to cook it.

    Step 3

    Whisk minced garlic and lime juice in a small bowl.

    Step 4

    Add olive oil, salt and pepper.

    Step 5

    Chop the scallions, cut tomatoes and cucumber in 1cm pieces.

    Step 6

    When quinoa is cooked add tomatoes, cucumber, scallions and parsley.

    Step 7

    Add the olive oil mix and stir.

    Step 8

    Serve it right away!
