Get some Idaho potatoes
Put some salt in a tray
Wash the potatoes
Put them on top of the salt
Put the potatoes in the oven for a couple of hours at 350. To check if they are fully cooked, just poke them with a knife and if goes trough easily then it's ready.
When they are ready take them off
Peel while they are hot.
Save the skins for snack... Drizzle some olive oil and crack some pepper.
Mush the potatoes. You can always use a fork
And let them cool for a couple of minutes.
Get your flour, eggs and salt ready. In this case you just need the yolks
Put flour on the work surface and take the potatoes out of the bowl
Add the yolks, three work just fine. And some flour. Be confident.
Work it for a little bit
but not too much. Just until the ingredients are well mixed

Put it in boiling water to see if holds the shape. If it does, you made it! It's cooked when floats
With both hands
Do a lot of little balls
You can use a gnocchi board
Or a fork.
And make a lot of them.
Cook them in boiling water seasoned with salt
Put some olive oil in a plate
The cooked ones start to float
Take them off and place them on the greasy plate.
Almost there.. At this point you can freeze them and use later
Really hot pan
Get some butter ready
And sage or any other herb of your preference
Add oil to the pan and drop the gnocchi
If you feel confident enough
Let them get some color
Add the butter... A good amount always high heat
Get your plate
The butter starts to brown and has a nutty smell
Add your sage or any other herb. Fry to release the aroma.

Grate some Parmesan cheese on top and eat it.
