How to Make Portuguese Chicken Stew

Supplies

  • 6 Chicken legs
  • 2 Paprika's (chopped)
  • 1 Carrot (chopped)
  • 5 Stalks of celery (chopped)
  • 2 Red onions (chopped)
  • 4 Cloves of garlic
  • 0.75 Liters Chicken stock
  • 0.40 kilograms Chickpeas
  • 0.20 kilograms Chorizo (chopped)
  • 2 Cans of peeled tomatoes
  • 1 Teaspoon Paprika powder
  • 1 Teaspoon Ground coriander seed
  • 2 Bay leaves
  • 1 Chili pepper (chopped)
  • Orange peel of half a orange
  • Instructions

    Step 1

    All the prepared ingredients

    Step 2

    Lightly braise the chicken legs in olive oil or butter on medium heat

    Step 3

    Fry the onions, garlic, celery and carrot in same oil/butter as chicken. For 4-5min on high heat

    Step 5

    Add paprikas, chorizo, orange peel, bayleaves, coriander seeds, paprika-powder and chili. Stir voor 4 minutes on high heat

    Step 6

    Add peeled tomatoes, chicken, chicken stock and chickpeas. Let it simmer on low heat for 1-2 hours. The longer the better!

    Step 7

    Very nice served with couscous or just some nice bread! Also nice to add some Kalamata olives. And cook some patatoes in the stew for the last 30minutes, to add some more mass to it.
