How to Make Poor Boy Pasta Using New Mexico Pinon Nuts

This is a short simple recipe on how to make a yummy Poor Boy Pasta using New Mexico Pinon Nuts! These tasty little nuts add a great crunch and toasted taste to a simple pasta dish!


  • 1 Pounds Spaghetti Pasta
  • ½ Cups Shelled Pinon
  • ½ Cups Olive Oil
  • 3 Tablespoons Butter
  • 1 Tablespoon Red Chili Flakes
  • 2 Teaspoons Minced Garlic
  • Salt
  • Pepper
  • 1 Large Pot
  • 1 Small Sauce Pan
  • 1 Large Mixing Bowl
  • Instructions

    Step 1

    Gather all of your ingredients. Start by boiling the pasta in a large pot.

    Step 2

    Melt the butter in a small sauce pan.

    Step 3

    Add Garlic and Pinon Nuts to the Butter and stir.

    Step 4

    Cook on medium heat until Pinon Nuts are golden brown / toasted. About 3 minutes. Do NOT Burn! They cook quickly!

    Step 5

    Add Half of the oil to the cooked pasta and stir.

    Step 6

    Add the other half of the Olive Oil to the cooked Pinon Nuts and stir.

    Step 7

    Mix cooked Pinon Nuts into Pasta.

    Step 8

    Add Red Chili flakes Season to taste using Parmesan, Salt, and Pepper. Mix.

    Step 9

    Serve warm or cold and Enjoy!
