Steam unpeeled whole beets 20 mins. Make sure to have water in bottom of steamer. Reserve for later
Peel beets. I put foil Over cutting board to prevent staining. Will come off hands but not clothes!
I quartered then sliced not too thin.
In your reserved beet water, add 2 tbsp pickling spice and three shot glasses of vinegar. Bring to a boil.
While that simmers and becomes lovely; half and thinly slice 2 small onions
Add half of the onions to jar or Tupperware. Add beets. Add remaining onions. Snack on beets that don't fit.
Add pickled beet juice to beets and onions. Get all those spices in!
Cool uncovered an hour. Put lids on tightly and give a little shake. Pickle overnight in fridge.
Great over salad, with Kielbasa, or paired with goat cheese!
