How to Make Pickled Cabbage (Russian Style)

  • 1 Kilogram cabbage
  • 5 medium carrots
  • 2 Tablespoons salt
  • 8 whole black peppercorns
  • 8 bay leaves
  • 2 Teaspoons sugar
  • Instructions

    Step 1

    Chop the cabbage

    Step 2

    Grate the carrots, and add to the cabbage with all mentioned supplies. Sugar is optional - it just gives a better crunch to the cabbage, but it will be also good without sugar.

    Step 3

    mix everything with your hands, you also can squash the mix a bit

    Put the cabbage mix in a bigger bowl, put a plate over it and put something heavy on the plate. Leave it like that for 3 days, room temperature.

    Step 6

    Optional: each day take the press off, thrust in a knife or a spoon handle in the cabbage mix to let the air in

    Step 7

    After 3 days the cabbage should be crunchy and also a bit acidic. Put it in a jar and keep it in the fridge.

    Step 8

    This goes well with vodka :-)
