How to Make Peruvian Fish Stew

Supplies

  • 4 Teaspoons Olive oil
  • 1 Cup Onion
  • 2 Garlic cloves
  • 2 Tablespoons Green chiles
  • 1 Pounds New potatoes
  • 14 Ounces Diced tomatoes
  • ½ Teaspoons Cumin
  • ¾ Teaspoons Sea salt
  • ¼ Teaspoons Black pepper
  • 1 Pounds Cod
  • 1 Pounds Bay scallops
  • 1 Lime
  • 8 Ounces Clam juice
  • 12 Ounces Water
  • Instructions

    Step 1

    Heat olive oil in large pot. Dice onion, add to pot, sauté until soft.

    Step 2

    Finely chop garlic and chilies.

    Step 3

    Cut potatoes into 1/2 inch dice, and add to pot along with cumin, salt and pepper. Cook for another 5 minutes.

    Step 4

    Add water and clam juice. Cover, Increase heat to medium high, and bring to a boil. Allow to boil for 10 minutes.

    Step 5

    Add tomatoes, cod, scallops and lime. Cover and bring back to a boil. Cook for 10 minutes.
