Take 2 very ripe Hachiya persimmons and freeze them solid
Peel the frozen persimmons
Chunk them up
Put the chunked up frozen persimmons into a food processor. Add in the coconut milk
Turn on the food processor and start mixing things up
When you have nice creamy persimmon ice cream scoop it out and serve it up
Serve it right away or put it in the freezer to stay chilled for later. Because the persimmons are so ripe and naturally sweet no sugar is necessary. Enjoy!!!
