How to Make Peanut Butter Bites

by Andrea Beres

Quick, easy, and healthier replacement for your favorite Reese's Cup treat!

  • 1/2 cup melted coconut oil
  • 1/4 cup unsweetened cocoa powder
  • 4 tsp GROUND Truvia-if you dont, it will be gritty
  • 1 pinch sea salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut oil
  • 3/4 tsp vanilla extract
  • Silicone molds or ice cube trays
  • Instructions

    Step 1

In a bowl, mix melted coconut oil, cocoa powder, ground Truvia, and salt. Make sure you grind the Truvia or else your chocolate will have a "crunch" when you bite into it.

    Step 2

Pour chocolate evenly into your mold, and place in freezer until slightly firm.

    Step 3

In a microwave-safe bowl, combine second half of ingredients- peanut butter, coconut oil, and vanilla extract. Microwave until mixture is smooth.

    Step 4

The smoother the mixture is, the easier it is to pour into your molds. Mix it well!

    Step 5

Pour peanut butter mixture over the chilled chocolate layer and place in freezer until set up and firm, about 20 minutes.

    Step 6

Once firm, remove from mold and enjoy! (They pop out of silicone molds MUCH easier than ice cube trays).

    Step 7

Store in a Ziplock bag in the freezer and enjoy for the week! Do not store them on the countertop- they will melt! This recipe was adapted from "Healthy Mama, Happy Mama!"
