Heat up 2tbs of EV Olive oil in a frying pan, add the chopped scallions and turkey bacon. Let it fry for a minute and then add the zucchini and cook for another 5 minutes. Stir occasionally.
Scramble 2 eggs in a bowl. Add salt, black pepper and 3tbs of grated parmigiano reggiano.
Meanwhile put the water to boil. Once it's boiling, add 2tbs of sea salt to the water and 200gr of whole wheat spaghetti.
In a large bowl, toss the spaghetti with the scrambled eggs and the rest of the sauce.
Serve immediately and enjoy this modern twist to an Italian classic pasta dish.
