Gather your supplies. You can easily make these with JUST bananas and eggs. They are delicious that way but I also like to add some extract and spices.
I use my frozen bananas instead of the unpeeled bananas. I buy bags of ripe and ready bananas for a reduced price and freeze them for anything from smoothies to pancakes.
Ok, at this point depending on what bananas you use you will either microwave the bananas until they are mushy, or you will slice the fresh bananas and put them in bowl.
Bananas are microwaved to a very soft state.
Mix up the bananas, after they are microwaved. If you sliced them fresh then mash them up and mix it up also.
General rule of thumb, 2 eggs per banana. I give or take depending on the banana size. I had 3 relatively small bananas so I used 4 large eggs.
This isn't necessary, but I added cinnamon, nutmeg, and almond extract.
I use this pancake batter dropper thingymajig. I'm a dad, I just make the pancakes, I don't know all the "technical" terms ;)
Heat up your skillet to 350 degrees, or if you use a pan I'd say about medium heat. The batter will start to lose its reflective shine when they are ready to be flipped.
They turn up a little darker than normal pancakes. NO, they aren't burnt. They are delicious and yummy. My kids tear them up like they are candy!
Hot and ready for the kiddos!!!! So yummy!!!!
