How to Make Paleo Pumpkin Pie

Supplies

  • 2 cups whole almonds
  • 3 Tbsp coconut oil
  • 1 can of Pumpkin
  • 1 cup of almond flour
  • 1/2 cup of coconut flour
  • 2 Tbsp of coconut nectar
  • 2 Tbsp of coconut sugar
  • 3/4 tsp sea salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup of coconut milk
  • 2 eggs
  • 2 Tsp honey
  • Instructions

    Step 1

    To make crust, combine almonds & coconut oil in food processor until blended to a crumbly consistency

    Step 2

    Crust mixture

    Step 3

    Grease a pie pan or glass

    Step 4

    Pat almond mixture into pie pan and put in oven at 325 for 10 minutes

    Step 5

    Combine all other ingredients until thoroughly mixed

    Step 6

    Pour over crust mixture & bake at 425 for 45 minutes
